Bolitas 

Instructions:

Peel the yucca 

Chop the yucca. Try to make each piece an equal size, so that the yucca will cook even during the boil.  

Add some salt along with the chopped yucca to a pot of water. Make sure each piece is able to be submerged in the water. 

Cook the yucca till tender 15-20 mins 

Let the yucca cool 

Smash and rain the yucca 

Add seasonings 

Add olive oil 

Mix the yucca with your hands 

Grab 2-3 tablespoons of yucca and form into a disc 

Add cheese to the center while forming the yucca into a ball 

Evenly coat the bolitas with flour 

Evenly coat the bolitas with egg mixture 

Evenly coat the bolitas with bread crumbs 

Heat oil to 325 degrees 

Cook for 4-5 mins
