Duck Breast

Instructions:

Cook the mandarin sauce

Place the mandarins, sugar, vinegar and 1 cup of watering a small sauce pan over high heat. Cook until sauce has reduced and thickened. Once the sauce has thickened, add the orange juice.

Cook the duck
-
Score the skin of the duck in a cross-hatch pattern

Season both sides with salt and pepper

place the skin side onto the pan
-
heat the pan with duck inside the pan to a medium heat
-
Cook until fat has rendered "5-6 minutes"
-
Flip the duck and cook for another "3-4 minutes"
-
Let the duck rest 10 minutes before cutting
