Duck Breast 

Instructions:

  • Cook the mandarin sauce

    • Place the mandarins, sugar, vinegar and 1 cup of watering a small sauce pan over high heat. Cook until sauce has reduced and thickened. Once the sauce has thickened, add the orange juice.​

  • Cook the duck 

    • Score the skin of the duck in a cross-hatch pattern ​

    • Season both sides with salt and pepper 

    • place the skin side onto the pan

    • heat the pan with duck inside the pan to a medium heat 

    • Cook until fat has rendered "5-6 minutes"

    • Flip the duck and cook for another "3-4 minutes"

    • Let the duck rest 10 minutes before cutting
