Chicken Piccata

Directions

Season chicken breast with salt and pepper 

 

Dredge chicken breast in flour 

 

Over medium high heat melt 2 tbsp of butter with 3 tbsp of olive oil. Once butter and oil start to sizzle add 2 pieces of chicken. Make sure not to crowd the pan.  Cook chicken till browned (about 3 mins) and flip. Cook for another 3 minutes, and remove chicken from heat. 

 

Add lemon juice, stock and capers. Bring to a boil while scraping the pan to get all the flavor. Taste for seasoning. Add salt and pepper if necessary. Return chicken to pan and simmer for 5 mins. Flip at 2:30 and coat with remaining juices. 

 

Garnish with parsley
