Curry Chicken

Directions

Seasoning

Whisk together all ingredients.

Cooking 

Heat a pot for 1-2 minutes at a medium high heat

Before adding the oil, drop the the temperature to a medium flame.

Brown the onions for 3-5 mins

Brown the garlic and ginger for about 30 secs, till the aromas release. 

Add the tomatoes and chicken broth and cook till it begins to boil

Cover the pot, and drop the temperature to low to simmer for 5 minutes

Pour mixture into a bowl, and blend 

Return the mixture to the pot and add chicken and seasoning

Bring the pot to a simmer over medium-low heat and cook for 10-12 minutes till the chicken has cooked through

Combine 2 tbsp of water with cornstarch and stir to create the slurry.

Add the slurry to thicken the curry

Add the heavy cream once you are satisfied with curry thickness.

Serve and top with cilantro
